Abstract
This article is devoted to the study of the phytochemical composition of melon varieties cultivated under the unique soil and climatic conditions of the Khorezm oasis, as well as their effects on human physiology. The paper analyzes the nutritional value of such varieties as Gurvak, Amiri, and Qariqiz, considered part of the “golden fund” of the region, including their content of antioxidants, vitamins, and minerals. In addition, the role of lycopene and beta-carotene found in melons in the prevention of cancer, as well as their functions in strengthening the cardiovascular system, are discussed.
